May is undoubtly one of my favourite months as many of the glorious super foods such as Boysenberries, Peas, Strawberries, Cauliflowers are in season.
In order to make the most of it, I made this colourful yet delicious and nutritious breakfast for me and my family this morning: fresh British organic strawbrerries on French toasts, with roasted organic almond butter from Sicily and chia seeds sprinkled on top. Yummy.
Strawberries are rich in vitamin A, B and C and also in iron, magnesium and phosphorus. Good for the health of the skin and mucous membranes, strawberries improve wound healing, encourage iron absorption and reduce blood-fat levels. Strawberries can help reducing the tendency to develop high blood pressure and can also help the body cope with stress. Furthermore, they can also be used to treat fever and to relieve the symptoms of rheumatoid arthritis.
Amonds as well are very nutrient-rich, giving plenty of vitamin E, B2, and B5 plus important minerals such as magnesium, calcium, iron, zinc, selenium and phosphorus and manganese, among the others.
Almonds are good for maintaining healthy blood-fat levels, strenghten the cardiocascular system and reduce the risk of coronary heart disease.
They also enhance antibody production and help protect against cancer.
The combination of almonds and strawberries make a really super scrumptious breakfast, perfect for kids as well. My 2 years old ablsolutely love it.
